Apple, tofu and sunflower seed cutlets

Tofu is great for making cutlets as it binds the mixture really well so the cutlets don't break up easily. It has a fairly neutral taste, which means that the other ingredients in the mix usually define the taste of the cutlets. In this recipe, the ingredients are all mild tasting, which allows the taste of the tofu to come through more. I've used a dessert apple here and gone for a slightly sweet taste. Some people might prefer to use a sour 'cooking' apple.

Ingredients

400-500g of tofu
1 dessert apple
A handful of sunflower seeds
1 carrot
1 small onion
A pinch each of ground cinnamon, cloves and nutmeg
A little flour
Salt
Oil

Chop the onion finely and fry gently in a very small amount of oil until the onion is transparent. Peel and chop the apple and grate the carrot. You can give the sunflower seeds a rough chop, too. Mash the tofu in a bowl and add all the other ingredients except the flour. Mix everything well then use your hands to form cutlets from the mix. Dust them with flour (spread the flour on a plate, lay the cutlets on it then turn them over to do the other side). Fry the cutlets in oil, on a medium heat, for about five minutes on each side.
