Bubble and squeak

This is a simple, quick recipe, provided you have some left-over cooked cabbage and mashed potatoes left. That's how the recipe originated. It's a traditional English recipe and made from the left-overs of a Sunday lunch. Cabbage and potatoes are the most common ingredients but it could include carrots, peas, Brussels sprouts - whatever was on the table on Sunday. The bubble and squeak was usually fried in the fat from Sunday's roast beef, or whatever the meat dish had been, but we'll skip that and use some nice clean and relatively healthy vegetable oil in this version of the recipe.

You can dust your bubble and squeak patties with flour if you wish, to make them a little easier to fry without breaking up, but it's not really necessary.

Ingredients

About equal quantities of chopped cooked cabbage
and cooked mashed potato
I onion, finely chopped
Black pepper
Salt
Oil for frying

Mash everything together well, and form large patties from the mixture. Fry in vegetable oil for about five minutes each side.
