Cabbage cutlets
I think you can make cutlets out of just about anything. I did this recipe with a left-over piece of cabbage. It was about a quarter of a smallish firm white cabbage - about 300g in all. I chopped it up roughly, put it in a pan with a little water, put a lid on and cooked it for about five minutes. When it was cool, I made some cutlets.
Sveta sometimes makes these too and she uses spices like cumin, turmeric, chilli and coriander. They taste great. I used black pepper here, but I would recommend trying out your own inspired spice mixtures.
Ingredients
Cooked cabbage
About 2 tablespoons of flour to each 300g of cabbage
Black pepper
Salt
Oil
Chop the cabbage finely then mix in the flour, salt and pepper and give everything a good smash up. Use your hands to form
cutlet shapes and dust them in a plate of flour before frying in vegetable oil.
Fry for about five minutes each side.
