Sirniki

..or cottage cheese cutlets. However, although the main ingredient, as the description, although not necessarily the name if you don't speak Russian, suggests, is cottage cheese, a vegan version of Sirniki can be made by substituting tofu for the cottage cheese. This works very well.

I say sunflower oil in the list of ingredients below, but that's only because it's the typical oil used in Russian cooking. Use another kind if you wish.

Ingredients

500g of cottage cheese
2 tablespoons of flour (plus a little more for dusting the cutlets)
1 tablespoon of sugar
A few raisins
A squeeze of lemon juice
A pinch of ground nutmeg
Salt
Sunflower oil

Put the cottage cheese in a flat bottomed container (a saucepan will do) and mash it well with some kind of mashing implement. The kind of thing used for making mashed potatoes will do the trick but if you don't have that, there are usually a number of other items lying around the average kitchen which will work just as well if you use your imagination. Mix the other ingredients into the mashed cheese and make small cutlet shapes using about a dessert spoon of mixture for each. Work fast and as you make the cutlets, dust them on either side in a plate of flour and lay them in a hot pan containing a little vegetable oil. Fry over a medium heat, and watch your sirniki don't burn. They cook much quicker than most cutlets. About three minutes on either side should do.

Traditionally, sirniki are served with sour cream, but they are nice with jam, too.
