Sounds weird, huh? It is. But it's also very tasty.
As I've already mentioned in other avocado recipes, every so often on my travels I come across a large amount of cheap ripe avocados, so I spend a bit of time working on avocado recipes. It happened a few years ago in India, once in Turkey and more recently, again in India. It's not really necessary to do anything with fresh ripe avocados other than cutting them in half and eating them, but I like experimenting.
I first found avocados in India several years ago at a place in the hills of Tamil Nadu, called Kodaikanal. I've never seen nor heard of them anywhere else in India, so I assume they don't grow anywhere else. The next time I returned to Tamil Nadu I kept my eyes open and, passing through a market town on the plains below Kodaikanal, I found piles of beautiful Kodaikanal avocados just as I'd hoped. I got as many as I could carry and, although I just ate most of them straight, I did try a few recipes. This is one of them.
One avocado should do two people for a modest dessert. Go for one each for serious munchies.
Ingredients
1 ripe avocado
About 2 cups of yoghurt
1-3 teaspoons of sugar
A few cashew nuts
Cut the avocado in half, remove the stone (if you plant it you'll get an avocado tree) and, using a spoon, scoop the flesh into a bowl. Beat the avocado until it's really smooth, add the yoghurt and sugar and beat it some more. Put the mixture in bowls and garnish with chopped cashew nuts.
