Anise tea

Use green anise seeds if you can get them. This recipe is really very simple but you need a pestle and mortar. Use one level teaspoon of anise seeds per person. Stick the kettle on before you start doing the seeds - that way you'll have hot water just when you need it. Heat a frying pan until it's really hot. Bung in the seeds and swirl them around for a few seconds - if they're green you'll see them change colour slightly (they'll go yellowish-brown). Put them into your mortar and smash them up. Put the pounded seeds into the teapot and cover with hot water. Don't leave the tea to infuse for too long - 3 or 4 minutes is enough - otherwise the essential oils will evaporate.
