Courgettes with saffron, chilli and lime

Courgettes are great. They keep well in the fridge and only take a few minutes to prepare. There are lots of different ways of cooking them and they go with all sorts of different seasonings. Here's a very quick and simple recipe for a courgette fry.

Ingredients

2 or 3 courgettes
1 red onion
A teaspoon or two of lime juice
A small pinch of saffron
A half teaspoon of crushed dry red chilli
Olive oil
Salt

Chop up the courgettes( I like to cut them into several pieces length ways and then cut the pieces into 5-6 cm wedges). Peel and halve the onion, then slice the halves fairly thickly.

Heat a frying pan with a little oil in it and add the courgette and onion pieces. Fry on a high heat, stirring frequently for seven or eight minutes, or until the onion begins to brown. Add the salt and saffron about halfway through cooking and stir in the crushed chilli at the end then drizzle with lime juice.

This dish will go well with plain steamed rice.
