Turkish-style green beans
Travelling vegetarians in Turkey usually end up living on side-dishes and starters, as most main dishes in restaurants are meat-based. This is no bad thing. A couple of side dishes with bread make an excellent, nutritious and filling meal. Have a look at my tomato pilau recipe for further discussion of this issue.
Ingredients
400-500g green beans
1 green pepper
2 tomatoes
1 or 2 cloves of garlic
A pinch of dried oregano
Half a teaspoon of ground coriander
A small piece of cinnamon stick
Salt
Olive oil
Top and tail the beans and cut them into 5 cm pieces. Chop up the onion, pepper and tomato as you like and chop the garlic finely, or crush it.
Fry the onion until it becomes transparent, then add all the other ingredients with enough water to almost cover the ingredients. Stir and cover the pan. After 5 minutes turn the heat down a little and simmer until the beans are soft, which should take about another 10 minutes - maybe longer if the beans were old and tough.
