Fried potatoes
This is one of the easiest recipes in the book - and it's quick.
Ingredients
7-800g of potatoes
I onion
Salt
Black pepper
Oil
Peel the potatoes and cut them as if for chips (French fries for
our American readers) Peel and chop the onion.
Heat the oil in a frying pan then fry the onion until it starts
to go transparent. Add the potatoes and stir gently. Turn the heat
down and cover the pan tightly. After ten minutes stir again gently.
Add a splash of water to stop the potatoes burning (don't worry about
them sticking and browning though - they taste better that way) and
cover tightly again. Check after another ten minutes - if they're
not quite ready, stir again and cover (again if they seem to be sticking
too much you can add a wee splash of water). They should be ready
in another few minutes. You can serve these potatoes with almost anything.
