Paneer tikka
As the title suggests, you'll need paneer for this recipe and you can find out how to make it here. Paneer tikka is usually cooked in a tandoor oven, but it's possible to do it on a barbecue with much the same effect.
Ingredients
A big lump of paneer
2 green peppers
3 tomatoes
2 onions
A small pot of yoghurt
Juice of 1 lemon
Red chilli powder
Salt
Cut the paneer into pieces about one centimetre thick and five centimetres square. Put the pieces into a bowl and pour over a marinade made from the yoghurt, lemon juice, chilli and salt. Turn the pieces to coat them evenly.
Take the cores and stalks out of the peppers and cut each pepper into eight pieces. Cut the tomatoes into quarters. Peel the onions and cut them into quarters too. Separate the onion quarters into pieces two or three layers thick.
Skewer the vegetable and paneer pieces and grill for about ten minutes.
