All the ingredients, apart from a little salt, are in the title of this recipe. My pasta recipes are generally quick and simple but this one is quicker and simpler than most. If you don't have pine nuts, you could try pumpkin seeds or chopped almonds and you can use almost any kind of pasta. 100 to 130 grams of pasta per person should be about right.
Ingredients
Pasta
A splash of olive oil
A squirt of lemon juice
A handful of pine-nuts
Salt
Cook and drain the pasta. Add a little salt then a splash (or two) of olive oil and mix well. Mix in some lemon juice but be careful not to use too much. Add a little and taste before adding more if necessary. Dry roast the pine nuts in a very hot frying pan then stir them into the pasta. Your lunch is ready.
Although this dish sounds quite plain, it does in fact make
a tasty light meal on its own. You could however serve it with a salad, sliced
fresh tomatoes or something more substantial such as stuffed tomatoes.
