Coconut rice

This one's eezy peezy and requires little introduction as the title says it all. It's just rice and coconut. I used desiccated coconut but you could use fresh grated coconut (click here to find out how to prepare it). In that case use 1.6 mugs of water.

Ingredients

1 mug of rice
2 mugs of water
A third of a mug of desiccated coconut
Salt

Put everything in a pot and give it a stir. Bring to the boil, turn the heat down to minimum, stir again and cover the pot tightly. After twenty minutes the rice should be soft and have absorbed all the water. Stir and serve.
