Another very simple recipe which produces a great quick meal. This makes a good accompaniment to other dishes to make a substantial meal, but it can also be enjoyed with just a wee salad for a light lunch or dinner. It's zero fat too, so makes a good healthy option if you're on a low calorie diet or just avoiding fats and oils.
Capers are usually quite salty, so bear this in mind when adding salt to the rice and adjust the amount accordingly. If you're using capers preserved in salt (these are my favourite) you might not need to add any salt at all.
Any long grain rice will do, but I like to use basmati or Thai jasmine rice.
Ingredients
1 mug of rice
1 courgette
2 teaspoons of capers
A little salt
Put the rice in a pan with 1.6 mugs of water and a little salt, stir once and set to boil. Chop the courgette into small cubes and when the rice starts boiling add the courgette and capers. Stir once and turn the heat down as low as possible. Cover the pan tightly and cook for about fifteen to twenty minutes. Turn off the heat and leave the covered pan to sit for a few minutes before fluffing the rice up with a fork and piling it into a serving bowl.
