Ashy's vegetarian recipes

This looks as well as tastes good. Try to use unwaxed lemons if you can get them. Otherwise give your lemon a good scrub under running hot water before using the rind.
Ingredients
1 mug of rice
1.6 mugs of water
Half of a lemon
1 small onion
A small piece of root ginger
1 tsp. of coriander seeds
A half tsp. of black mustard seeds
2 cardamons
A third of a tsp. of turmeric powder
Salt
Oil
A few sprigs of green corriander
Peel a few strips of rind from the lemon and chop it finely.
Peel the ginger and onion and chop them both finely. Heat a little oil in the
bottom of a pot and fry the onion, ginger, coriander and mustard seeds and cardomons.
When the onion is beginning to brown, stir in the rice, lemon rind, turmeric
and salt. Add the water and juice from the half lemon, stir gently and when
the mixture boils, stir it again and turn the heat right down to minimum. Cover
the pan tightly and leave for twenty minutes or so until all the water has been
absorbed and the rice is soft. Stir in some chopped green coriander just before
serving.
