Vegetable boiled rice

Another very easy recipe. You can vary the vegetables. Green beans or peppers are a nice alternative. This is a good accompaniment to cutlets.

Ingredients

1.5 mugs of rice
2.5 mugs of water
1 carrot (diced)
A handful of peas (fresh or frozen)
A handful of sweet corn (tinned or frozen)
Salt

Put the rice, water, vegetables and some salt in a pan and stir to separate the rice grains. Put the pan, without the lid, on a fairly high flame until it starts to boil. When it does, cover the pan tightly and leave to cook for about 20 minutes. Taste a few grains to check if the rice is soft enough. If it isn't, turn of the heat and leave the covered pan sitting for five minutes.

Before serving, stir the rice gently to mix the vegetables evenly.
