Nutty bean sprout salad
For this salad I used sprouted mung beans (or moong beans. I'm never sure
how to spell it) and I bought them in the Korean food section of our bazaar.
You can use many different kinds of sprouted beans. Aduki beans are also good
and it's easy to sprout beans yourself. I tried it soon after doing this recipe
and here's how to do it.
Ingredients
1 bowl of bean sprouts
1 red pepper
1 carrot
A splash of sesame oil
Juice of about half a lemon
A handful of roasted almonds
Salt
Core the pepper and peel the carrot. Slice into thin 'match-sticks'. Chop
the almonds and toss all the ingredients together.
