Beetroot, walnut and prunes salad

This makes a nice starter. It's also good as a tonic if you've been hitting the booze too hard. It stains your tongue bright crimson, but that's a hazard of eating beetroot generally. Just don't wear any colours which might clash. The method of cooking the beetroot is as usual - click here for instructions. It's essential to wear some kind of protection when you're grating the beetroot (and we're not talking condoms here) as it will stain your clothes if it gets on them.

If you don't have prunes, you can use dried apricots or raisins instead. There's no need to soak the dried fruit beforehand.

Ingredients

2 large cooked beetroots, peeled and grated
A handful of walnuts
A handful of prunes
Juice of half a lemon
2-3 tablespoons of oil
A little grated nutmeg
Salt

Chop the walnuts and prunes (take the stones out of the prunes first, if there are any) and mix everything together. What could be easier?
