Another salad discovered in Armenia which goes by the name of French salad (see also Armenian pomegranate salad). I don't think is is or ever was, but it's a good salad.
Quarter of a hard white cabbage, finely shredded
1 sour green apple, grated
1 carrot, grated
1 green chilli, finely chopped
A splash of cider vinegar
A dessertspoon or two of olive oil
A few sprigs of green coriander, chopped
A little salt
A good trick here is to put the cider vinegar in a bowl, add the apple as soon as it's grated and mix it well with the vinegar. This will stop the apple going brown. Otherwise this is a simple procedure once all the ingredients are shredded, chopped or grated. Just mix everything together.
