Cauliflower and chickpeas salad
You could use any type of beans for this salad but chickpeas go well with ginger.
Ingredients
1 mug of cooked chickpeas
3 or 4 large florets of cooked cauliflower
Half of an onion
1 clove of garlic
A small bunch of green coriander
A sprig of basil or mint
2 or 3 firm tomatoes
1 tablespoon of olive oil
A quarter teaspoon each of red chilli and ginger powder
Salt
Chop the tomato and onion finely and cut up the cauliflower
into smaller florets. Chop and pound the herbs and garlic together with the
spices. Mix all the ingredients together and leave in the fridge for an hour
or two before serving.
