Lazy humus salad
I like humus but sometimes I just can't be bothered making it.
I don't have a food processor so I have to smash the chick peas by hand. I remember
when I did have a processor and then it was so much fuss getting it out of
the cupboard and cleaning it afterwards, so I still couldn't be bothered making humus Here,
I use all the ingredients for humus plus the trimmings that I would usually use
as garnish, such as olives, pine-nuts, tomatoes and coriander and just mix everything
together. This salad makes a great filling for pita bread. Stuff the bread first
with shredded white cabbage and thinly sliced red onion, then spoon in the salad.
Ingredients
1 tin of chick peas
A handful of pitted black and/or green olives
A small handful of pine nuts
2 tablespoons of tahina
1 tablespoon of olive oil
1 large tomato
A few sprigs of green coriander
1 large clove of garlic
Juice of half a lemon
Cut the tomato into quarters and remove the seeds. Chop into
small pieces. Chop the garlic and coriander finely. Dry roast the pine nuts
in a hot frying pan for a few minutes, then mix all the ingredients together.
