Another good party salad which can be made the day before and the taste will improve over night. Splash out and buy the pasta which comes in three colours - red yellow and green - I don't know what it's called, but it will make your salad look good as well as adding a bit of extra flavour.
1 kg tri-coloured pasta twists
3 tomatoes
1 green pepper
1 small onion
Half tsp. dried rosemary
Half tsp. paprika
A small bunch of parsley
Olive oil
Salt
Cook the pasta as usual and rinse in a sieve with cold water. Leave it to drain. Chop the tomatoes, onion and pepper finely. Cut up the parsley with scissors, and mix everything in a large bowl or pot. You don't need too much oil here. It's perhaps best to add a large splash at the mixing stage and then try the salad afterwards to see if it needs any more.
