Salad Amelia
I discovered this recipe in Tashkent, Uzbekistan. It was written on a paper
napkin. The napkin was in my pocket. I had no idea how it got there. The handwriting
was clearly mine and I can only assume I wrote the recipe down, in a restaurant
somewhere, when I was perhaps a little drunk. I'm glad I wrote it down. It's
a good recipe.
Ingredients
Florets from half of a cooked cauliflower (preferably still warm)
100-150g of sweet corn
6-8 walnut halves, chopped
2-3 cloves of garlic, chopped
2-3 tomatoes
Olive oil
Some shredded lettuce leaves and a few whole ones for garnish
Salt
Mix all the ingredients together. Serve on a bed of whole lettuce leaves.
