Spinach, bean sprout and apple salad

It's worth bearing in mind that if you want to make a zero-fat salad, then a little bit of grated or chopped apple will go a long way to making the salad taste good. I first discovered this with an oil-free beetroot and apple salad, then later I made a Samarkand salad without oil and used a little apple vinegar instead. Again the fresh apple in the salad seemed to provide a pleasing texture and a moistness in place of the oil. I've also discovered that using apple in salads lessens the amount of salt required and in many cases (as is the case with the beetroot salad and this one) salt can be omitted altogether.

So what we have here is a low-sodium, low carbohydrate and zero fat salad, bursting with vitamins and minerals. I could probably flog it as a hangover cure, but don't wait until then. This really is a refreshing tasty salad and it must be good for one's health regardless.

Ingredients

A large bunch of fresh young spinach
A handful or two of bean sprouts
1 carrot
1 apple
Juice of about half a lemon

Peel and grate the carrot and peel and chop the apple. Squeeze the lemon over the carrot and apple and mix well as quickly as possible as this will prevent the apple going brown. Chop the spinach roughlyand mix into the carrot and apple along with the green beans.

I usually serve a salad like this to offset the oiliness of someother dish such as cutlets, but you could have a totally fat-free meal by serving with a dish like kidney bean and tomato pate.
