I got this recipe from a 'winter salads' page in a Russian newspaper but it has changed a little during the transition to my cookbook. Given the fact that the original suggested using eggs, which I have replaced with potatoes, and the fact that I translated the recipe myself, I think we could truthfully say that that was one salad and this is another, although there are indeed similarities, notably the inclusion of sweet corn and prunes (I think it said prunes).
Ingredients
1 tin of sweet corn (250-300g)
100-150g prunes (soaked for 2 or 3 hours in a little hot water)
2 cooked potatoes
2 cloves of garlic
100g of grated cheese (or a handful of chopped walnuts)
4 or 5 tablespoons of mayonnaise
Black pepper
Salt
Chop the potatoes into 2-3 cm cubes. If they are starchy, sticky potatoes, drop the cubes straight into cold water. When you have done them all, drain the water off and your potato cubes will be clean and crisp. Chop the prunes into small pieces and chop the garlic finely. Mix all the ingredients together and leave in the fridge for an hour or so.
This is a heavy salad and could be a meal on it's own. It's also a good addition to a party buffet dinner as it's quite dry and easy to handle, very filling and goes well with beer.
