Cherry-tomato and pine-nut salad

Good cherry tomatoes are sweeter than regular tomatoes. Pine nuts are quite sweet too and the tangy dressing in this salad just brings out all the flavour of the nuts and tomatoes.

Ingredients

A few tomatoes
A small lettuce
A handful of pine nuts
1 tablespoon of balsamic vinegar
3 tablespoons of extra virgin olive oil
A large pinch of dried oregano
A few crushed black peppercorns
A little salt

Rinse, drain and separate the lettuce leaves and arrange them around the edge of a salad plate. Cut all the cherry tomatoes in half, pile them in the centre of the plate, then sprinkle with salt. Put a pan on the stove for roasting the pine nuts and while it's heating up, do the salad dressing. Put the oil, vinegar, pepper and oregano in a small jar or glass, cover tightly and shake well.

Throw the nuts in the hot pan and swirl them around for a minute until they begin to brown. Pour the dressing over the tomatoes and sprinkle the pine nuts on top.
