Tomato, walnut and basil salad

Chopped walnuts, garlic and basil makes a delicious crunchy topping which is good sprinkled over various raw or boiled vegetables. Here, we do it with tomatoes to create a superb side salad.

Ingredients

A few tomatoes
A handful of shelled walnuts
A clove of garlic
A couple of sprigs of fresh basil or a few pinches of dried
A splash of olive oil
A little salt

Finely chop the walnuts, garlic and basil and mix together. Slice the tomatoes and lay on a plate. Sprinkle with salt and drizzle over a little olive oil. Top with the chopped nut and herb mixture and serve.
