Tomato, orange and coriander sauce

This is a great barbecue sauce, but it also goes well with cutlets, fried paneer or fried tofu.

Ingredients

5 tomatoes
1 orange
Fresh green coriander
Salt

Wash the tomatoes and put them in a small saucepan with the juice of the orange. Cover the pan and cook on a medium heat for about ten minutes.

Leave the pan to cool a little, then place a sieve (strainer) over a wide bowl and press the tomatoes and juice through with a ladle. Discard the skin and seeds and leave the tomato sauce until it's almost cold before adding chopped coriander and seasoning with salt.
