Pizza toast by another name. I've only tried this in India, so it may not be very authentic. I also may not have spelled it right ('bruschetta' that is; I know how to spell 'pizza' and 'toast'). This is a quick and easy recipe which is handy for late night munchies or when people drop in unexpectedly - Assuming you have the ingredients, of course.

Ingredients
6 slices of bread
2 tomatoes, finely chopped
2 cloves of garlic, finely chopped
Grated cheese
Olive oil
Dried oregano
Salt
Drizzle a little olive oil onto the slices of bread and put a couple of spoonfuls of chopped tomatoes onto each slice. Sprinkle the chopped garlic, a little oregano and salt over the tomatoes and top with grated cheese. Put the slices on a baking tray and put into a fairly hot oven for ten to fifteen minutes (until the cheese starts t omelt and the bread starts to brown at the edges).
