Bunch-o-vitamins

A recipe that results in just what it says....a vitamin-packed breakfast, dessert or anytime snack. The inspiration came from a visit to Diamond restaurant in Yerevan (which also has Diamond green salad on its eclectic menu). We were perusing the menu, waiting for our food to arrive and we spotted 'bunch of vitamins' in the 'Salads' department. We thought it was a great name. It was a tri-lingual menu and we couldn't understand the Armenian name (we've learned to read but don't usually understand the words!) but the Russian was 'Buket vitaminov', so the English was a fair literal translation. We didn't order the salad but the list of ingredients looked interesting and I wrote it on a napkin to try at home.

The original list had sour cream in it, but I've noticed that many people are put off by the idea of tripling the calorie count in a dish just by adding a blob of cream. If you feel that way, try using yoghurt for less calories and a similar effect. I made this dish for breakfast the first time and it was just perfect, but I'm sure it would go down a treat anytime.

Ingredients

1 banana
1 apple
1 carrot
4 or 5 prunes (dried plums)

150-250g cottage cheese
3 or 4 tablespoons of yoghurt or sour cream

Grate the carrot and roughly chop the fruit. Gently mix all the ingredients together and you have your bunch-o-vitamins breakfast/desert/snack.

If you like experimenting, you could try adding roasted sunflower seeds, chopped nuts, oatmeal or anything else you fancy to the mix.
