Cheese Beanos
This must be the easiest recipe in the book. In fact some might say it's
a bit cheeky putting it in a recipe book at all, but here it is. I just
had to put it in. It's perhaps the first recipe I ever learned after boiled
eggs and it's absolutely brilliant. You can't make it unless you have a
cooker with a grill and for this reason I've only ever eaten cheese beanos
at home in Scotland, which is quite rare these days. That's probably part
of what makes them so special.
If you're vegan you could leave out the cheese but then it would just
be beans on toast, wouldn't it?
Ingredients:
1 tin of baked beans
4 slices of bread
Enough grated cheddar cheese to cover 4 slices of toast
Toast the bread on one side. Turn it over and put a layer of beans
on and then a layer of grated cheese. Toast until the cheese is bubbling.
