Cous-cous with peppers and mint

There are many ways of making cous-cous more interesting. This is just one of them. Try your own ideas using the same techinque. Frying onion before adding the cous-cous gives a lot of flavour and how about adding nuts? Try different combinations of herbs and spices, too. You might want to go for a sweeter option and add some dried fruit or use some fruit juice in place of some of the water. Lemon juice adds a nice tang, especially to fruity cous-cous.

Ingredients.

1 mug of cous-cous
2 yellow or green peppers
Salt
Olive oil
A few fresh mint leaves (or a large pinch of dried mint)

Chop the pepper quite finely and fry in a little oil for two minutes. Add the cous-cous with some salt and fry for a further two minutes, then add a mug of boiling water. Remove from the heat, stir and cover the pan. After five minutes uncover the pan and return it to the heat. Stir and cook for a further 3 or 4 minutes. Stir in the chopped fresh mint at the end of cooking time and.

Try serving as a garnish to a dish with a lot of sauce. How about aubergines with courgette and pumpkin seed sauce, or courgettes in spicy tomato sauce.
