This is so simple. There are only two ingredients and it takes ten minutes all in. But the result is absolutely brilliant. If you've got a spare aubergine lying around, you could knock this dish together as an extra accompaniment to a main meal. Alternatively you could do it as a snack. I'll give you the basic recipe first (and it is basic) then I'll give you a couple of ideas for sandwiches and a salad. I'm sure you can think of more yourself.
Ingredients
Aubergines
Olive oil
Put a little olive oil into a frying pan. Cut the aubergines into 1 cm thick slices while the oil is heating, then lay them in the pan. Cook for 4 or 5 minutes each side - until they are browning. That's it.
Hot fried aubergine slices
Whole cos lettuce leaves
Tomato slices
Chopped garlic or Lebanese garlic sauce
Crusty bread rolls
Salt and pepper
Slice open the bread rolls and shove the ingredients inside.

Sour cream or yoghurt
Start with a slice of aubergine, then a slice of tomato, then
a pepper ring. Stick a blob of cream in the centre and garnish with a basil
leaf or two. Repeat with the next slice of aubergine and so on. You won't
go wrong if you add some finely chopped or pounded garlic here too.
