Mixed vegetable pakora

  

For more detail on cooking pakora see my recipe for marrow, aubergine and onion pakora. Here I'll list the ingredients and explain only the parts that are different from the other recipe.

  

Ingredients

  

3 cups of gram flour
2 cups of yoghurt
Cold water
Salt
1 tsp. whole cumin seed
Half of a medium cauliflower
3 potatoes
1 small onion

   Mix the gram flour, yoghurt, salt and cumin seed together. Add cold water until the mixture is the consistency of thick cream. Chop the cauliflower into small (2cm) florets, peel and chop the potatoes into 1cm cubes and peel and chop the onion finely. Mix the vegetables into the batter mix.

   Pour some oil into a large deep frying pan (about 3-4 cm depth of oil) and heat it. When it's ready, drop dessert spoons of mixture gently into the pan. Fry for about 4 minutes one side then 3 on the other. Transfer to absorbent paper when they are cooked. Check out the links below for some good sauces and chutneys to serve with pakora.
