Here's a way of making a couple of packets of instant noodles a little more interesting. Throw away all the seasonings that come with the noodles and use this recipe instead. It must be better for your health. In fact, you don't have to use only instant noodles. You can use any kind of noodles: thin noodles, thick noodles, spaghetti, instant noodles - whatever. If you can't find whole unsalted roasted peanuts, the best thing to do would probably be to buy some un roasted kernels and dry roast them in a hot frying pan for a couple of minutes, shaking or stirring them constantly. Using salted peanuts might also work but I haven't tried that.
Ingredients
Cooked noodles
A splash or two of sesame oil
A small handful of unsalted roasted peanuts
2 or 3 spring onions
Salt
Using a pestle and mortar, grind the peanuts quite finely. Chop the spring onion and mix with the peanuts and salt and add the mixture to the noodles. Mix the noodles gently using two forks to distribute the seasonings evenly then add a splash or so of oil and mix a little more.
Try serving nutty noodles along with a salad.
