Green lentil and rice soup

This recipe comes from a small town called Goris, in the south of Armenia. I'm sure people make similar soups in other parts of the world, but I encountered it in Goris at Khachik's homestay B&B. Khachik's wife always lays on a good vegetarian spread when we visit. This is one of her recipes, which she served as a light starter, but by increasing the quantity it would easily do as a lunch on its own.

This recipe will make enough for four hungry people.

Ingredients

1 cup of rice
1 cup of green lentils
1 small onion
Chopped fresh herbs: mint, dill, parsley and/or or coriander leaves
Salt
Oil
1.5 to 2 litres of water

Chop the onion and fry gently in olive oil until transparent. Add the rice and lentils and fry for a few more minutes, then add the water. Bring to the boil and simmer for about twenty minutes. When the lentils are tender, salt to taste, then remove the pan from the heat and stir in the chopped herbs.
