Fried tofu and peanuts

When I made fried noodles with tofu and young radishes, I bought a huge block of tofu and there was loads left over. Sveta loved the recipe and asked if I could do tofu again a few days later. As we were in a bit of a hurry that day, I knocked up something quick and simple. This is it.

Ingredients

400g of tofu
1 small onion
2 or 3 cloves of garlic
A handful of roasted peanuts
A large splash of soy sauce
A large pinch of chilli pepper
Oil

Chop the onion and garlic finely and chop the tofu into large chunks. Grind the peanuts (see the tofu, peanuts and radishes recipe for more detail on using peanuts).

Fry the onion and garlic together for a minute or so, until they become transparent. Throw in the tofu chunks and chilli and fry until the tofu starts going golden and bits are sticking to the pan. Ad the peanuts and soy sauce and stir for another thirty seconds. That's it. Serve with a salad and bread for a simple, filling lunch.
