Green beans with peanuts
Use any kind of green beans for this recipe. The coarser ones will
need to cook for longer. Also check the older beans for strings and
pull them off if there are any. They will be along the join on either
side of the pod and are easy to remove if they are there.
Ingredients
1/2 kg. green beans
1 tomato
A handful of raw peanut kernels
1 small onion
3 cloves of garlic
1/2 tsp. coriander seeds
A pinch of ground cinnamon
1/2 teaspoon garam massala
Salt
Oil for frying
Top and tail the beans and cut into 3 - 5 cm. lengths. Roast
the peanut kernels in a very hot frying pan for a few minutes
without oil, then crush with a rolling pin, knife blade, or something
similar. Chop the onion, tomato and garlic finely.
Put a little oil in the bottom of a pot and heat it. Fry the
onion until its transparent and then add the coriander seeds,
garlic and tomato. Stir and cook for 3-4 minutes. Add the beans
and some hot water (about 3 cm. in the bottom of the pan). Bring
to the boil then ad the peanuts salt and spices. Cover the pot
tightly and simmer for 10 - 20 minutes until the beans are tender.
