Spicy spinach with peanuts
My friend Triphena showed me this recipe. She cooked it without spices and
said it was a traditional South African recipe that her mum often used to cook.
The dish is good without spices but I can never resist experimenting with recipes
and I decided to add a little seasoning.
Ingredients
About 500g spinach
A large handful of peanuts
2 cloves of garlic, peeled and chopped
A small piece of root ginger, peeled and chopped
A half tsp. of whole mustard seeds
A half tsp. of ground coriander seeds
A few black peppercorns, crushed
A little grated nutmeg
Salt
Vegetable oil
Pound or chop the peanuts and fry in oil with the garlic, ginger and
spices, for three or four minutes. Add the chopped spinach with a little
salt, stir and cover the pan. Cook for a further eight to ten minutes.
