When is a burger not a burger? When it doesn't contain meat. I don't really like the term 'veggie burger'. Veggie burgers are things they sell in meat burger restaurants so the vegetarians don't spoil the fun. Veggie burgers can be whacked on the barbecue next to the flesh burgers so the poor vegetarians don't feel left out. Veggie burgers are a wonderful invention for filling the gap which must exist when meat is removed from the diet. These are some of the reasons I don't like to call these recipes 'veggie burger' recipes. 'Veg cutlets' may not seem much of an improvement in the nomenclature department, but here I'm following the Indian tradition which doesn't view vegetarianism as a fad or something which needs to be accommodated to the mainstream.
At first I didn't call anything on this page a 'burger' but then I decided to write up one of my versions of the classic hippy beanburger. I understood that calling it a 'bean cutlet' would just be giving it the wrong name. They are called bean burgers. People like the alliteration. Bean cutlet doesn't sound nearly as good, and I don't think many people are going to search for that on the web. No, they're going to type in 'beanburgers', 'bean-burgers', or 'bean burgers' and I want people to find my recipes, so now there are veggie burgers and veggie cutlets here. And why not? After all, it's only a bunch of recipes...
