Vegetarian snacks, starters and side-dishes

Some of these are classic starters, but a lot could also easily be listed under 'main dishes'. Many of them are here because they are either quick and especially easy to prepare or else they are best prepared and left to go cold so they are more conveniently available when you get the midnight munchies. Their classification as 'snacks' should definitely not be understood as meaning that these dishes are in anyway inferior to the others. If you want to try some of them as main meals go ahead. I can assure you that you won't die from malnutrition.
